I’m obsessed

With these quinoa muffins!  I modified the recipe slightly by subbing unsweetened almond milk for whole milk, and light brown sugar for the dark. I also used dried mixed berries instead of raisins.  O.M.G. yummm! I think the hubby and teenager might even eat them!

I’m in LOVE!

So far, I’ve been staying on track with Jillian’s 30 day shred, finished 10 days so far, 5 each of level 1 & 2. Tomorrow starts level 3. Managed to pound out  a few 5k’s on the “dreadmill” in between and do some weight training, too!
6 days till the Frosty 5k!
