On monday I, along with a small group of friends and family, started a 30 day challenge. I think I may have mentioned this?
Anyhoo…I’m pleased to say the first week went well! I managed to avoid Jaime’s tempting candy dish all week, and avoid the junk at home! There’s not much to avoid so that helps!
I also survived the first week of this:

Not only did I endure Jillian hell all week, but Monday after work Nikki convinced me it would be a great idea to do 2 loops around Pine Mountain, which totals about a 6 mile run and climbing 1,000 steps! No joke. Next week we’re going for 3! Glutton for punishment?
After no jelly bellies or Reese’s peanut butter cups for an entire
eternity week, I did indulge in a frozen pizza (well, not the whole thing) and a glass of chocolate milk on Friday night, outrageous, I know. I’m a partier.
And snuck some of the grandkids animal crackers, which I may or may not have dipped in a little lite cool whip. I’ll never tell!
Healthy finds/swaps I’ll be using for well over 30 days:
So yummy….even the dog loved it. You think after 8 years I’d learn not to leave bread on the counter and leave the kitchen. Even if it’s in the bag, the beast will devour it.
Topping pancakes with vanilla Greek yogurt and fruit is just as tasty as drowning them in butter and syrup. Way better for you, too…who knew?
This is amazeballs on a turkey sandwich, as long as you get to the bread before your dog.
Shakeology is the bomb for breakfast on the go.

Tilapia grill packets:
1 each red and orange bell pepper, sliced
Broccoli and cauliflower florets
Butter, lemon, and seasoning of your choice…I used Cajun seasoning
On a square of tinfoil make a bed of slaw and peppers, place broccoli and cauliflower florets around the edge. Top with tilapia filet (add seasoning now), a pat (about a tablespoon) of butter and lemon slice.
Fold tinfoil over fish, ok if it’s open on the top, and grill at about 400° for about 20 minutes, until fish flakes with a fork and veggies are tender.
After 2 days of rest, well….
not sure if you’d call it rest, I’m ready for another week!
