Rainy day recipe

I saw a recipe floating around on Facebook and Pinterest for a soup that burns more calories than it contains. With a line like that, you have to try it, right?

I made this โ€œfat burning” soup last night, and it was so good, I had to share!

Ingredients:

2 TBS olive oil
1 medium onion, diced
3 cloves garlic, chopped
3 stalks celery, diced
1 green pepper, diced
*I used 1/2 each green, red, yellow, and orange peppers*
3 carrots, diced
*I had organic baby carrots, and used about 15*
1/2 head cabbage, chopped
4 cups chicken or vegetable broth *organic preferred
1 can diced tomatoes *organic preferred
1 tsp each basil and oregano
1/2 tsp each crushed red pepper flakes and cayenne pepper
Salt and pepper to taste

Directions:

In large stock pot, heat oil over medium heat
Add onion, pepper, carrots, and celery, sautee until just tender
Add garlic, sautee 2 min
Pour in broth and stir in spices
Stir in tomatoes and cabbage, bring to a boil
Cover and simmer over med/low until cabbage cooks through
Salt and pepper to taste
Makes a ton, can freeze for later use!
Yum!
*I diced some cooked
chicken breast I had on hand and added about 1 1/2 cups to soup*

It’s raining here in the Yoop, perfect day for another bowl of soup ๐Ÿ™‚
