Taco Thursday!

Happy Cinco De Mayo! Wait,What? It’s over?
Oh well, as usual, I’m a few days late and a couple dollars short!
The good news is, I have an incredibly easy taco recipe for you! Anndd..it’s healthy! Shhh…don’t tell your husband, or your kids!

Turkey Tacos (21 Day Fix recipe)

Ingredients:(organic if possible)

1 1/2 lbs raw 93% lean ground turkey
1 tsp. garlic powder
1 tsp ground cumin
1/2 tsp sea salt
1 tsp. chili powder
1 tsp paprika
1/2 tsp. dried oregano
1/2 medium onion, finely chopped
1/2 green bell pepper, finely chopped
3/4 cup water
3/4 tomato sauce, no sugar added
**6 large lettuce leaves, washed and dried** Or taco shells, tortilla chips, whatevs!
1 medium tomato, chopped
1 cup chopped fresh cilantro


Heat a large nonstick skillet over medium heat.  Add turkey; cook stirring frequently for 5 minutes or until no longer pink.
Add garlic powder, cumin, salt, chili powder, paprika, and oregano; mix well. Add onion and bell pepper, cook stirring frequently for 4 to 5 minutes, or until onion is translucent.
Add water and tomato sauce. Bring to a boil Reduce heat to low; cook, covered for 10 to 12 minutes.  Top each lettuce leaf evenly with turkey mixture, tomato and cilantro.

And let’s throw in a side dish for good measure! Nothing like a good ole Spanish Rice!

Ingredients:(organic if possible)
2 tablespoons oil
2 tablespoons chopped onion
1 1/2 cups uncooked brown rice *I used a brown rice/quinoa mix*
2 cups chicken broth *low sodium preferred*
1 cup chunky salsa

Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

Here it is in all it’s glory, quinoa/rice blend topped with turkey taco meat, a pinch of cheese, organic greens, fresh salsa, and a few crispy tortilla chips!


Even better when you wash it down with a nice dos equis glass of water!
